This spicy chicken dish in creole sauce is a family favourite and adored by most guests at dinner parties.

Creole Chicken


1 chicken
1 onions (cut into rounds)
2 limes or 1 lemon
2 shallots
3 cloves
2 cloves of garlic
Cayenne pepper
1 tablespoon vinegar
1 tablespoon tomato paste
3 tablespoons olive oil
1 ½ cups water
¼ cups fresh chopped parsley


Cut chicken in pieces. Wash them with a lime and rinse with boiled water.

In a large mixing bowl, mix the garlic, the cloves, shallots, half of the onion, salt and lime juice. Add the chicken pieces and make sure that all pieces are well coated. Leave aside for 2 hours to marinate. Drain.

In a saucepan, brown the pieces of chicken in oil. Add what's left of the onion, water, a pinch of Cayenne pepper, vinegar, tomato paste, parsley and thyme, stirr now and then. Cook on medium heat for 1 hour.
