A simple recipe to prepare, quick and very comforting.

Rice Pudding

Ingredients:

1 cup white rice, rinsed
2 ½ cups water
2 cups whole milk
2 cups de evaporated milk
brown sugar, to taste
1 cinnamon stick
2 star anise
½ teaspoon ground nutmeg
1 teaspoon salt
1 teaspoon butter
1 teaspoon lime zest

Instructions:

Boil water, add rice, cook over medium heat.

When the rice has absorbed almost all the water, add the evaporated milk, milk, brown sugar, cinnamon stick, anise, nutmeg, salt and zest. Simmer 20 minutes over low heat. Remove from heat and add butter. Serve in dessert bowls and sprinkle with nutmeg.
