The acras are small fritters that can be prepared with fish, seafood or vegetables. They are served as an appetizer or starter.

1 cup flour
1 teaspoon baking powder
1 teaspoon butter
1 ½ cups water
1 egg white beaten until stiff
250g (8 oz) shrimps
2 garlic cloves
1 sliced onion
1 chopped hot pepper
1 chopped fresh sprig of parsley
½ teaspoon salt
½ teaspoon pepper
Oil for frying
Beat the butter with the flour and baking powder. Mix in slowly the water to obtain a smooth paste. Add egg white and form a ball that is allowed to stand for 2 hours.
Peel and crush the shrimp with garlic, onion, parsley and pepper. Mix the dough. Add salt and pepper.
Heat oil. Make small balls and fry them 3 to 4 minutes.
