Fried plantains with rum
This dessert is very easy to do and is a crowd pleaser.
2 ripe plantains (yellow almost black)
4 tablespoons butter
Juice from 1 lemon
Juice from 2 oranges
¼ cup Rhum
Peel plantains and cut into 4 lengthwise. Coat with lemon juice. Marinate for 10 minutes.
Melt the butter in a frying pan. Brown the sliced plantains in butter, turning them so that each side browns evenly. Add the orange juice. Simmer 5 minutes.
Pour the rum and flambé.
