For a fancy supper, this recipe of fish soufflé is easy enough to help you impress your guests.

Fish soufflé

Ingredients:

1 cup of fresh fish of your choice
1 cup mashed potatoes
2 tablespoons butter
2 tablespoons milk
2 eggs
juice of half a lemon
1 teaspoon chopped chives
2 pinches of smoked paprika
salt and pepper to taste


Instructions:

Put the butter and milk in a medium saucepan over low heat; add the mashed potatoes and the beaten egg yolks in advance. Stir in fish and other ingredients, egg whites beaten stiff and mix gently.
Pour into a greased baking dish oven, deep enough to allow the soufflé to grow. Bake for 20 minutes at 375 F.
