The acras are small fritters that can be prepared with fish, seafood or vegetables. They are served as an appetizer or starter.

1 cup flour
1 teaspoon baking powder
1 teaspoon butter
1 ½ cups water
1 egg white beaten until stiff
250g (8 oz) cod
2 garlic cloves
1 sliced onion
1 chopped hot pepper
1 chopped fresh sprig of parsley
½ teaspoon salt
½ teaspoon pepper
Oil for frying
Beat the butter with the flour and baking powder. Mix in slowly the water to obtain a smooth paste. Add egg white and form a ball that is allowed to stand for 2 hours.
Soak cod in cold water for 1 hour to desalinate. Flake the cod, there fold in garlic, onion, parsley and pepper.
Heat oil. Put together the mixture of cod and the batter. Add salt and pepper. Form small fritters and fry 3 to 4 minutes per side.
