Callaloo is widely known throughout the Caribbean like Haiti and has a distinctively Caribbean origin, created by enslaved Africans using ideas of the indigenous people along with both African and indigenous plants.

Callaloo is widely known throughout the Caribbean like Haiti and has a distinctively Caribbean origin, created by enslaved Africans using ideas of the indigenous people along with both African and indigenous plants.

Ingredients:



3 cups Okra (callaloo)
1 lb beef, cubes
1 large chopped onion
3 finely cut schallots
1 minced garlic
Salt, to taste
2 cups water
1 tablespoon vinegar
½ cup oil
1 whole hot pepper
2 thyme sprigs
3 cloves

Instructions:

Marinate the meat.*

Heat oil in a skillet, brown the beef so it is well cooked.

Add callaloo to the meat and fry for about ten minutes. Add onion, shallots, garlic, salt, vinegar, oil, water, pepper, thyme and cloves.

Cover and simmer 30 minutes over low heat.

Serve over white rice.
