Baked macaroni and cheese
Delicious and comforting, baked macaroni and cheese is always a good solution for a family meal. In addition, it is easy and simple to prepare.
1 lb macaroni (1 package)
1/4 cup salted lards, diced
1 large onion, coarsely chopped
1/4 cup all-purpose flour
1/2 cup evaporated milk
3 tablespoons unsalted butter
1 cup shredded mozzarella cheese
1/2 teaspoon ground salt
1/2 teaspoon ground black pepper
1/4 teaspoon ground red pepper
1/4 teaspoon grated nutmeg
1/2 cup Parmesan cheese
Preheat the oven to 350 ° F. Lightly grease a 2-quart baking dish.
Cook macaroni as directed on box. You can use any other pasta cut, such as rigatoni or shells. When done, drain and return to pot; set aside.
Melt butter in a large saucepan or Dutch oven over medium-low heat. Brown the onion. Add lard and cook for 3 to 5 minutes. Stir in flour; cook, stirring constantly for about 2 minutes. Gradually whisk in milk, and cook, whisking constantly, 5 minutes or until thickened. Remove from heat. Stir in salt, black and red pepper, nutmeg, shredded mozzarella cheese, and cooked pasta.
Spoon pasta mixture into a lightly greased 2-qt. baking dish; top with Parmesan cheese. Bake uncovered, for 30 to 40 minutes, or until the top is golden brown.
Let cool at least 15 minutes before serving.
